Bake for your dog and make them a special treat this Valentine’s Day! These are special-occasion dog-friendly treats. A peanut butter cookie with strawberry purée and meringue—YUMMY! This recipe makes 12 cookies and 10 meringues. Dylan and Rainey are both over 50 pounds and get 1 each per day (with daily food adjustments made), so you will need to use your best judgment as to how much to feed your dog. They are people-friendly as well so you and your dog can enjoy them together.

These are special-occasion dog-friendly treats. A peanut butter cookie with strawberry purée and meringue—YUMMY! This recipe makes 12 cookies and 10 meringues.

Ingredients
  

Cookie Base

  • 1⅓ cups unbleached flour, separated
  • ½ cup creamy peanut butter
  • ½ cup pure pumpkin purée
  • 1 large egg, lightly beaten

Strawberry Purée

  • 1 cup strawberries, frozen

Meringue Clouds

  • 4 egg whites, room temperature
  • 8 tsp white sugar

Instructions
 

To Make Cookie Base

  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • Whisk together peanut butter, pumpkin, and egg until smooth.
  • Add flour (starting with 1 cup) and stir with a spoon until you form a soft dough (adding extra flour as needed) that isn't too sticky.
  • Drop the dough onto a floured surface and knead a few times while forming it into a uniform ball (may need to add some flour). Roll out dough to ¼" (6 mm).
  • Using a cookie cutter of your choice, cut dough into desired shapes. Keep rerolling out dough until you use it all up.
  • Put cookies on prepared baking sheets and bake for about 20–25 minutes until golden on the edges. Cool on rake.

Strawberry Puree

  • While the cookies cool, start making the puréed strawberries. Heat frozen strawberries over low heat until they become soft and start to break down. Then puree and cool to room temperature.

Meringues

  • Preheat oven to 200°F. Line baking sheet with parchment paper (if you want, you can trace the shape of your cookie cutter on paper, just put pencil/pen side down).
  • Place room temperature egg whites in large, clean bowl and whisk on high until soft peaks form.
  • Gradually add sugar 1 tsp. at a time (and let incorporate) until very stiff peaks form. This can take 5 minutes or more.
  • Spoon or pipe whipped egg whites onto prepared parchment paper into desired shape. We were able to make 10 meringues.
  • Bake for 40 minutes then cool completely in oven. Once cooled, carefully remove meringues from parchment paper.

Putting Them All Together

  • Once everything is cooled, you can assemble. Simply spread about 1 tsp. of purée on top of a cookie base then carefully add a meringue cloud on top of the purée. You can decorate with extra purée.

Notes

I used a 2″ heart-shaped cookie cutter to make the cookies. This recipe made 12 cookies. 
If your dog doesn’t like strawberries, you can use frozen blueberries. If you prefer to use fresh berries, instead of frozen, just wash them and purée in a blender (you don’t have to heat them up). 
I baked the meringues for only 30 minutes because they started to get very brown. These made a more marshmallow-like texture. If you want a more crispy texture, you can bake them for up to 60 minutes. Just remember, they will crisp up more as they cool in the oven. 
Store leftovers in refrigerator and use within 3 days.

Over the past year I’ve been doing a lot of baking. I don’t tend to eat too many desserts so decided to start trying to create dog-friendly versions of popular cakes and pies. The dogs have enjoyed most of my endeavors, so I will probably start including some of those recipes in future blog posts. I hope that you too will start to bake for your dog. 

I am not a pet nutritionist, so I can’t tell you how much to feed your dogs. Dylan is 90 lbs and Rainey is 50 lbs and their serving size is one piece each. I also make sure to then balance the amount of their regular food that I feed them.
